Beef Stefatho Recipe
2 lbs beef
1 chopped onion
1/2 cup
olive oil
1 lb tomato
1 tbs tomato paste
1/4 cup
vinegar
3 cloves garlic
1/4 cup parsley
sea salt
Pepper
1/2 tsp rosemary leaves
2 lb small onion
1/2 cup butter
Cut beef into cubes. Place in a deep sauce pan and saute with oil. Add chopped onion and chopped tomatoes. Add vinegar, garlic, and parsley and cover on low for 2 hours. Add salt, pepper, bay leaves, and rosemary leaves. Add onions and butter and saute around beef.
Cover and simmer about 45 minutes more.
