Makes Two Pans Of Baklava

MIX
2 lbs fillo dough
1 1/2 lbs walnuts
1 cup almonds
1 cup bread crumbs plain
1 tsp cinnamon
1 cup sugar
3/4 lbs (3 sticks) unsalted butter

SYRUP
4 cups sugar
3 cups water
¼ lemon
¼ cup honey
2 cinnamon sticks

Make syrup first. Boil sugar, water, lemon, and cinnamon stick. Add honey and simmer for 5 minutes. Let sit.

Chop walnuts and almonds and mix with breadcrumbs, cinnamon, and sugar. In a 16 ½ *11 ½ pan butter bottom and then place 9-10 fillo sheets down, brushing each fillo with melted butter. Spread 2 cups of walnut mixture on top of the buttered fillo leaves and then top with another 3 sheets of fillo, buttering each one again. Add 2 cups of walnut mix and top with 3 sheets of fillo, buttering each one again. Once again add 2 cups of walnut mix and this time top with 12 fillo leaves, brushing each one with melted butter as before. Cut pastry into diamond shapes.

Bake at 350 degrees for 45-50 minutes or until fillo is golden brown. When baklava is cooled, pour the warm syrup over the baklava and serve.
