Home Go back Couscous Salad ¼ cup vegetable broth granular 2 cups uncooked couscous 1 red pepper chopped 1 bund green onions chopped 1/3 cup cilantro chopped 1 Tbs olive oil 1 Tbs water ½ cup Greek vinegar 1 tsp thyme In a large bowl, combine vegetable granules to the couscous and mix well. Bring 2 ½ cups of water to boil; add the water to the couscous, stir and cover for 15 minutes. Fluff with fork and add peppers, green onions, and cilantro. Prepare dressing by combining the olive oil, water, Greek vinegar, and thyme and pour over salad. Mix well. Chill for 2 hours and serve.
