Karithopita
Greek karithopita recipe
16 eggs, separated
1 ½ cup paximadia
3 ½ cups walnuts or almonds ground
1 ¼ cup sugar
1 tsp baking powder
1-2 tsp. Vanilla powder
1 tsp cinnamon
1 tsp all spice

Syrup
3 cups sugar
2 cups water
½ lemon
1 Tbs. Whiskey

Preheat oven to 350 degrees. Beat egg yolks with sugar until creamy. Add vanilla powder to mixture. Beat egg whites until firm peaks form. Mix the egg white mixture with the egg yolk mixture. Add the paximadia with the nuts, baking powder, cinnamon, and allspice. Mix well. Grease a 11 x 16 round pan.

Bake for 30-40 minutes or until done. Cut into diamond shapes and let cool. Prepare syrup by boiling water, sugar, whisky and juice. Pour mixture over cake and serve.
